  • 3 large ripe bananas, mashed (about 1 ½ cups / 360 ml)
  • ½ cup (113 g) unsalted butter, melted and slightly cooled
  • ¾ cup (150 g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ¼ cup (60 g) plain Greek yogurt
  • 1 ½ cups (190 g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon (optional)
  • 1 cup (175 g) semi-sweet chocolate chips
  • ½ cup (60 g) chopped walnuts, toasted

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center of the oven. Grease a 9×5-inch loaf pan with butter or non-stick spray, then line it with parchment paper, leaving some overhang on the long sides.
  2. In a large bowl, mash the three ripe bananas with a fork until mostly smooth but still with a few small lumps (about 1 ½ cups).
  3. Add the melted butter, granulated sugar, eggs, vanilla extract, and Greek yogurt to the mashed bananas. Whisk until smooth and well combined.
  4. In a separate medium bowl, whisk together the all-purpose flour, baking soda, salt, and cinnamon (if using).
  5. Pour the dry ingredients into the wet mixture. Use a rubber spatula to gently fold together just until no streaks of flour remain. Do not overmix.
  6. Gently fold in the chocolate chips and toasted walnuts. Reserve about 2 tablespoons of each to sprinkle on top.
  7. Scrape the batter into the prepared loaf pan and spread evenly. Sprinkle the reserved chocolate chips and walnuts on top, pressing them in slightly.
  8. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent with foil for the last 10-15 minutes.
  9. Let the bread cool in the pan for 10 minutes. Then, using the parchment paper, lift it out and transfer to a wire rack to cool completely (about 1 hour) before slicing.

Notes

Use overripe bananas (mostly brown with dark spots) for best sweetness and moisture. Do not overmix the batter to avoid dense bread. Toasting the walnuts enhances their flavor. Let the bread cool completely for cleaner slices. The flavors deepen after a day or two.
