  • 3 tablespoons unsalted butter
  • 45 cloves fresh garlic, minced
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon chili garlic sauce (or sriracha, red pepper flakes, or gochujang)
  • 1 teaspoon brown sugar (or coconut sugar, honey)
  • 1 teaspoon sesame oil (optional)
  • 23 green onions, sliced
  • Optional add-ins: cooked chicken, shrimp, tofu, soft-boiled egg, frozen peas, bell pepper strips

Instructions

  1. Bring a large pot of water to a rolling boil. Add both packs of ramen noodles (discard seasoning packets). Cook for 2-3 minutes until al dente. Drain in a colander; do not rinse. Set aside.
  2. Place a large skillet or wok over medium heat. Add 3 tablespoons unsalted butter. Let it melt slowly until it foams slightly but does not brown.
  3. Add minced garlic to the melted butter. Stir continuously for about 30 seconds until fragrant and just starting to turn golden. Do not let it burn.
  4. Pour in 2 tablespoons soy sauce, 1 tablespoon chili garlic sauce, and 1 teaspoon brown sugar. Stir and let cook for about 30 seconds until the sugar dissolves and the sauce thickens slightly. Taste and adjust heat if desired.
  5. Add the drained ramen noodles to the skillet. Use tongs or a spatula to toss gently, coating every strand. Cook for 1-2 minutes, stirring occasionally. If the pan looks dry, add a splash of water (about 1 tablespoon at a time).
  6. Drizzle 1 teaspoon sesame oil over the noodles and toss once more. Remove from heat. Sprinkle sliced green onions on top.
  7. Serve immediately in bowls. Add optional toppings like a soft-boiled egg or protein. Eat right away while hot and glossy.

Notes

Do not overcook the noodles; they will continue cooking in the hot sauce. Use cold butter cut into cubes if in a rush. Keep heat medium to avoid burning garlic. Prep all ingredients before starting.
