These small batch chocolate chip cookies are soft, chewy, and ready in under 20 minutes with no chilling required. Perfect for late-night cravings or a quick treat without committing to three dozen cookies.

Ingredients

Scale
  • 4 tablespoons (57g) unsalted butter, melted
  • 3 tablespoons (38g) granulated sugar
  • 3 tablespoons (38g) light brown sugar, packed
  • 1 large egg yolk
  • ½ teaspoon vanilla extract
  • ⅔ cup (83g) all-purpose flour
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ⅓ cup (60g) semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a medium microwave-safe bowl, melt 4 tablespoons of unsalted butter in 15-second intervals until just melted. Let it cool for a minute.
  3. Add 3 tablespoons of granulated sugar, 3 tablespoons of packed light brown sugar, 1 large egg yolk, and ½ teaspoon of vanilla extract to the melted butter. Whisk vigorously for about 30 seconds until smooth and glossy.
  4. In a small bowl, whisk together ⅔ cup of all-purpose flour, ¼ teaspoon of baking soda, and ¼ teaspoon of salt.
  5. Pour the flour mixture into the butter mixture. Use a rubber spatula to fold together gently until no streaks of flour remain (about 10 to 12 strokes).
  6. Fold in ⅓ cup of semi-sweet chocolate chips until evenly distributed.
  7. Using a cookie scoop or tablespoon, portion the dough into 6 equal balls (about 1.5 tablespoons each). Place them on the prepared baking sheet, spacing about 2 inches apart.
  8. Bake for 9 to 11 minutes, until edges are golden brown and centers look slightly underbaked and puffy.
  9. Remove from oven and let cookies cool on the baking sheet for 5 minutes. Transfer to a cooling rack to cool completely, or serve warm.

Notes

For softer cookies, bake for 9 minutes. For crispier cookies, bake for 11 minutes. If cookies spread too much, let melted butter cool longer before mixing. If they don’t spread enough, spoon and level the flour. Press extra chocolate chips on top after baking for a bakery look.
