These creamy, rich slow cooker mashed potatoes with cream cheese are the ultimate hands-off side dish. Perfect for holidays, potlucks, or any weeknight dinner, they deliver silky texture and buttery flavor with minimal effort.

Ingredients

Scale
  • 3 pounds russet potatoes, peeled and cubed (1-inch)
  • 8 ounces cream cheese, softened
  • 4 tablespoons unsalted butter, cubed
  • ½ cup whole milk, warm
  • ¼ cup sour cream
  • 1 teaspoon garlic powder
  • 1½ teaspoons salt, plus more to taste
  • ½ teaspoon freshly ground black pepper
  • Optional garnish: chopped chives or parsley, extra butter pat, paprika

Instructions

  1. Prep the potatoes: Peel and cut russet potatoes into 1-inch cubes. Rinse in cold water to remove excess starch, then drain well.
  2. Season the potatoes: Place drained potato cubes in the slow cooker. Sprinkle with garlic powder, salt, and black pepper. Toss to coat evenly.
  3. Add the butter: Scatter cubed butter over the seasoned potatoes.
  4. Slow cook the potatoes: Cover and cook on high for 3-4 hours or on low for 7-8 hours, until fork-tender.
  5. Add cream cheese and sour cream: Add softened cream cheese and sour cream to the slow cooker. Let sit for 1-2 minutes to soften.
  6. Mash the potatoes: Use a potato masher or hand mixer to mash until desired consistency. Do not over-mix.
  7. Add warm milk: Slowly pour in warm milk while mixing gently. Add in small increments until creamy.
  8. Taste and adjust: Adjust seasoning with extra salt and pepper if needed.
  9. Keep warm: Switch slow cooker to ‘warm’ setting and keep covered for up to 2 hours. Stir in a splash of warm milk if dry before serving.

Notes

For best results, use full-fat cream cheese and let it come to room temperature. Warm the milk before adding to prevent potatoes from seizing. Do not over-mix to avoid gluey texture. Potatoes can be made up to 2 days ahead and reheated in the slow cooker with a splash of warm milk.
