  • 1/2 cup (120 ml) honey
  • 1/3 cup (80 ml) soy sauce (low-sodium preferred)
  • 4 cloves garlic, minced
  • 2 tablespoons (30 ml) apple cider vinegar
  • Optional: pinch of red pepper flakes
  • Optional garnish: toasted sesame seeds or chopped green onions

Instructions

  1. In a mixing bowl, whisk together honey, soy sauce, minced garlic, and apple cider vinegar until well combined. Add red pepper flakes if desired.
  2. Place frozen meatballs evenly in the slow cooker insert; no need to thaw.
  3. Pour the honey garlic sauce over the meatballs, coating them evenly. Stir gently if needed to avoid breaking meatballs.
  4. Cover and cook on LOW for 3 to 4 hours, or on HIGH for 1.5 to 2 hours for a quicker option.
  5. About 10 minutes before serving, gently stir the meatballs to coat them in the thickened sauce. Sprinkle with sesame seeds or green onions if using. Let sit for a few minutes before serving.

Notes

Use frozen meatballs to save time and keep them tender. Avoid over-stirring to prevent meatballs from breaking. If sauce is too thin near the end, cook uncovered on HIGH for 15-20 minutes to thicken. For gluten-free, substitute soy sauce with tamari or coconut aminos. Pre-toast garlic for a milder flavor. Sauce flavors deepen if meatballs sit overnight.
