These Easy Slow Cooker Garlic Herb Mashed Potatoes are incredibly easy to make, using simple ingredients and the slow cooker to deliver creamy, flavorful results with minimal effort. Perfect for busy weeknights, they can be made ahead and kept warm until serving.

Ingredients

Scale
  • 3 pounds Russet or Yukon Gold potatoes, peeled and cut into 1-inch chunks
  • 6–8 garlic cloves, peeled and smashed
  • 1 cup chicken or vegetable broth (low-sodium)
  • 4 tablespoons unsalted butter, cut into pieces
  • ½ cup whole milk or heavy cream, warmed
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. Prep the potatoes: Scrub clean (if leaving skins on) or peel. Cut into 1-inch uniform chunks.
  2. Layer in the slow cooker: Place potato chunks, smashed garlic, dried rosemary, dried thyme, and 1 teaspoon salt in the slow cooker. Pour broth over everything and stir.
  3. Cook on low: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until potatoes are fork-tender.
  4. Drain the liquid: Carefully drain excess liquid into a bowl and reserve about ½ cup.
  5. Add the butter: Add butter pieces to hot potatoes and let melt for 1-2 minutes. Meanwhile, warm the milk or cream.
  6. Mash the potatoes: Mash with a potato masher to desired consistency (avoid over-mashing).
  7. Add the warm milk: Gradually pour in warm milk while mashing/stirring, starting with ¼ cup and adding more until desired consistency.
  8. Season and finish: Taste and adjust salt and pepper. Stir in fresh parsley. Add reserved cooking liquid if too thick, or let sit uncovered if too thin.
  9. Keep warm until serving: Switch slow cooker to ‘keep warm’ setting. Potatoes stay hot for up to 2 hours.

Notes

For best results, use Yukon Gold potatoes. Warm the milk or cream before adding to prevent gummy texture. Do not over-mash. The reserved cooking liquid can be used to adjust consistency. Potatoes can be prepped the night before and stored in cold water in the fridge.
