These creamy, flavorful mashed potatoes are made entirely in the slow cooker with Yukon Gold potatoes, garlic, and fresh herbs. They’re the perfect hands-off side dish for busy weeknights or holiday gatherings.

Ingredients

Scale
  • 3 pounds Yukon Gold potatoes, peeled and cut into 1-inch chunks
  • 6 to 8 garlic cloves, peeled
  • 4 tablespoons unsalted butter, cut into pieces
  • 1 cup low-sodium chicken or vegetable broth
  • 1/2 cup whole milk or heavy cream, warmed
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh chives, chopped
  • 1 teaspoon salt, plus more to taste
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Prep the potatoes: Peel the Yukon Gold potatoes and cut them into 1-inch chunks. Rinse in cold water to remove excess starch.
  2. Layer in the slow cooker: Place potato chunks in the slow cooker. Add garlic cloves, butter pieces, chicken broth, salt, and pepper. Stir gently to distribute.
  3. Cook on low for 4 to 5 hours or on high for 2 to 3 hours, until potatoes are fork-tender and garlic cloves are soft.
  4. Warm the milk: About 10 minutes before potatoes are done, warm the milk or heavy cream in a small saucepan over low heat until hot (do not boil).
  5. Mash the potatoes: Drain any excess liquid from the slow cooker. Add the warmed milk and mash with a potato masher or hand mixer until desired consistency. Do not over-mash.
  6. Add the herbs: Fold in chopped parsley and chives. Taste and adjust salt and pepper as needed.
  7. Serve immediately: Transfer to a serving bowl and top with a pat of butter and extra herbs if desired. Keep warm in the slow cooker on the warm setting for up to 30 minutes.

Notes

Don’t over-mash the potatoes to avoid a gluey texture. Warm the dairy before adding to keep potatoes creamy. Yukon Gold potatoes are recommended for the best texture. For a vegan version, use vegan butter, vegetable broth, and unsweetened oat milk or cashew cream. Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
