Easy Slow Cooker Buffalo Chicken Sliders with Blue Cheese Slaw

Tender, shreddable buffalo chicken cooked in a slow cooker with ranch seasoning, served on toasted slider buns with a creamy, tangy blue cheese slaw.

  • 2 pounds boneless, skinless chicken breasts (or thighs), trimmed
  • 1 cup Frank’s RedHot sauce (or preferred brand)
  • 2 tablespoons unsalted butter, melted
  • 1 packet (1 ounce) dry ranch seasoning mix
  • 4 cups green cabbage, finely shredded
  • 1/2 cup mayonnaise, full-fat
  • 1/2 cup crumbled blue cheese, divided
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 slider buns, toasted
  • Celery sticks and carrot sticks for serving (optional)

Instructions

  1. If chicken breasts are thick, pound them to an even thickness and place in the slow cooker in a single layer.
  2. In a medium bowl, whisk together the buffalo sauce, melted butter, and dry ranch seasoning.
  3. Pour the sauce mixture over the chicken in the slow cooker, ensuring it is well coated.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until chicken reaches 165°F and shreds easily.
  5. Remove chicken from slow cooker and shred using two forks or a hand mixer on low.
  6. Discard excess liquid from the slow cooker (or save for gravy) and mix shredded chicken back into the remaining sauce.
  7. In a separate bowl, combine shredded cabbage, mayonnaise, 1/4 cup blue cheese, apple cider vinegar, salt, and pepper. Toss to coat.
  8. Toast slider buns in a skillet with butter or in a toaster oven until golden brown.
  9. Assemble sliders by placing buffalo chicken on the bottom bun, topping with blue cheese slaw, and adding extra blue cheese crumbles if desired.
  10. Serve immediately.

Notes

Chicken can be cooked ahead and frozen for up to 3 months. Slaw is best made fresh but can be prepped 24 hours in advance (add cheese before serving). Toast buns to prevent sogginess. For a milder heat, mix buffalo sauce with ketchup.
