Ingredients

Scale
  • 4 oz Brie cheese
  • 4 oz Aged cheddar
  • 4 oz Goat cheese log
  • 4 oz Prosciutto
  • 4 oz Salami (Genoa recommended)
  • 1/2 cup Mixed olives (kalamata and castelvetrano)
  • 1/4 cup Marcona almonds
  • 2 tbsp Honey
  • 1/4 cup Dried figs or apricots
  • 1/4 cup Grapes (red or green)
  • Small handful Fresh rosemary or thyme sprigs (for garnish)
  • 1 small baguette or crusty bread (sliced into 1/2-inch rounds)
  • 1/2 cup Crackers (plain water crackers and herb/seed crackers)
  • 1/4 cup Fig jam or membrillo (quince paste) (optional)
  • 1 small apple or pear (thinly sliced, optional)
  • Cornichons or pickled onions (optional)

Instructions

  1. Take your cheeses out of the refrigerator 30 minutes before serving. Set the brie, cheddar, and goat cheese on a plate and let them come to room temperature.
  2. Slice your baguette or bread into 1/2-inch thick rounds. If desired, toast them lightly in a 350°F oven for 5-7 minutes until just golden.
  3. Prep your fruit: wash grapes and leave in small clusters; if using apple or pear, slice thinly and toss with lemon juice to prevent browning; pat dried figs dry if sticky.
  4. Arrange your cheeses first on the board, spacing them out (e.g., brie on left, cheddar in middle, goat cheese on right).
  5. Add the meats: fold prosciutto into loose ribbons or waves; roll salami slices into cylinders or fold into quarters. Place near complementary cheeses.
  6. Fill in with accompaniments: spoon olives into a small bowl and place on board; drizzle honey into another small bowl; arrange almonds and dried fruit in piles; scatter grapes in empty spaces.
  7. Add bread and crackers: fan them out on edges of board or on a separate plate; tuck some crackers between cheese wedges.
  8. Garnish with rosemary or thyme sprigs; drizzle honey over goat cheese or brie if desired. Step back and adjust if needed.

Notes

Let cheese come to room temperature for best flavor. Don’t overcrowd the board; leave some empty space. Balance textures and flavors. Add a briny element (olives, cornichons) to cut richness. For best results, serve immediately at room temperature.
