Ingredients

Scale
  • 1 cup (227g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • 2 ½ cups (312g) all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 8 oz (225g) cream cheese, softened
  • ½ cup (115g) unsalted butter, softened
  • 1 cup (120g) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • Optional: 1 tablespoon apricot jam (for glazing)

Instructions

  1. Make the Sugar Cookie Dough (10 minutes prep): In a large bowl, cream together the softened butter and granulated sugar using an electric mixer until light and fluffy, about 3-4 minutes. Add the egg and vanilla extract, mixing well to combine.
  2. Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing on low speed until a soft dough forms. Don’t overmix — just bring it together.
  3. Shape and Bake the Crust (15-18 minutes baking): Press the dough evenly into your 9-inch pizza pan, forming a smooth, flat base with slightly raised edges to hold the toppings. Bake in a preheated oven at 350°F (175°C) for 15-18 minutes, or until the edges are golden and the center is set. Remove from the oven and place on a wire rack to cool completely.
  4. Prepare the Cream Cheese Frosting (10 minutes): While the crust cools, beat together the softened cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, mixing until creamy and spreadable. If the frosting feels too thick, add a teaspoon of milk to loosen it slightly.
  5. Assemble the Fruit Pizza: Spread the cream cheese frosting evenly over the cooled sugar cookie crust. Arrange the strawberries, blueberries, and raspberries in a patriotic pattern — think stripes or stars — whatever feels right. If you want a shiny finish, gently brush the fruit with warmed apricot jam using a pastry brush.
  6. Chill and Serve: Refrigerate the assembled fruit pizza for at least 30 minutes before slicing to help the frosting set. Slice into wedges and enjoy!

Notes

Use softened butter (not melted) for best dough texture. Chill dough if too sticky before pressing into pan. Wash and dry berries thoroughly to prevent soggy frosting. Add a teaspoon of milk to frosting if too thick. Can substitute gluten-free flour or dairy-free ingredients for dietary needs. Store leftovers refrigerated up to 3 days; freeze crust separately for longer storage.
