  • 2 cups whole milk (or almond/oat milk for dairy-free)
  • ¾ cup granulated sugar
  • 1 tablespoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg (optional)
  • ¼ teaspoon salt
  • 2 tablespoons unsalted butter, cut into small pieces (for topping)
  • Optional: powdered sugar for dusting after baking
  • Optional: fresh berries or sliced bananas for serving

Instructions

  1. Cube about 6 cups of sturdy bread into roughly 1-inch pieces. Use stale or day-old bread for best results.
  2. In a large bowl, whisk together 8 large eggs, 2 cups whole milk, ¾ cup granulated sugar, 1 tablespoon vanilla extract, 1 teaspoon cinnamon, ¼ teaspoon nutmeg, and ¼ teaspoon salt until fully combined and slightly frothy (about 2 minutes).
  3. Place the cubed bread into a greased 9×13-inch baking dish. Pour the custard mixture evenly over the bread, pressing down gently with a spatula to ensure all bread soaks up the liquid.
  4. Cover the dish tightly with plastic wrap or foil and refrigerate overnight or at least 6 hours.
  5. The next morning, remove the casserole from the fridge and dot the top with 2 tablespoons of unsalted butter cut into small pieces.
  6. Preheat oven to 350°F (175°C). Bake uncovered for 45-55 minutes, or until the top is golden brown and the custard is set in the center. Test doneness by inserting a knife; it should come out clean or with a few moist crumbs.
  7. Let the casserole rest for 5-10 minutes before serving to firm up and make slicing easier.

Notes

Use day-old or stale sturdy bread like brioche or challah for best texture. Cover casserole tightly when refrigerating overnight to prevent drying out. If top browns too quickly, tent with foil and continue baking. Optional add-ins include nuts, chocolate chips, or fruit. For dairy-free, substitute milk and butter accordingly.
