  • ½ teaspoon salt
  • ½ cup (113g) unsalted butter, softened
  • 1 ¾ cups (350g) granulated sugar
  • 3 large eggs, room temperature
  • 1 cup (240ml) whole milk, room temperature
  • 2 teaspoons vanilla extract
  • ¾ cup (135g) rainbow sprinkles (sturdy jimmies)
  • Red and blue gel food coloring (optional)
  • 2 ½ cups (300g) powdered sugar
  • ½ cup (113g) unsalted butter for frosting, softened
  • 23 tablespoons heavy cream
  • 1 teaspoon vanilla extract (for frosting)
  • Additional red, white, and blue sprinkles for topping

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch sheet pan thoroughly with butter or non-stick spray. Set aside.
  2. In a large mixing bowl, whisk together flour, baking powder, and salt until evenly mixed.
  3. Add softened butter and granulated sugar to the dry ingredients. Beat with an electric mixer on medium speed until mixture looks sandy and crumbly, about 3-4 minutes.
  4. Beat in eggs one at a time, ensuring each is fully mixed before adding the next, about 2 minutes total.
  5. Pour in milk and vanilla extract. Mix on low speed until batter is smooth and creamy, about 3 minutes. For patriotic swirls, divide batter into three bowls and tint one with red gel and another with blue gel food coloring, leaving one plain.
  6. Fold in sprinkles gently with a rubber spatula to avoid color bleeding, about 1-2 minutes.
  7. Pour batter into prepared pan. If using colored batter, spoon dollops of red, white, and blue batter randomly and gently swirl with a knife for a marbled effect.
  8. Bake for 30-35 minutes, checking doneness with a toothpick inserted in the center; it should come out clean or with a few moist crumbs.
  9. Remove from oven and cool in pan for 10 minutes, then transfer to a cooling rack to cool completely before frosting, about 30-40 minutes.
  10. To make frosting, beat softened butter until creamy. Gradually add powdered sugar, alternating with heavy cream and vanilla extract. Beat until fluffy and smooth, about 5 minutes.
  11. Frost the cooled cake evenly using an offset spatula. Sprinkle extra red, white, and blue sprinkles on top for decoration.

Notes

Use room temperature ingredients for best texture. Do not overmix after adding flour to keep cake tender. Fold sprinkles in gently to prevent color bleeding. Grease pan well or line with parchment paper to avoid sticking. If frosting is too thick, add more cream; if too thin, add more powdered sugar. Cake can be made gluten-free or vegan with substitutions. For cupcakes, bake at 350°F for 18-22 minutes.
