  • 1 cup (240g) pure pumpkin puree
  • 1/2 cup (120ml) neutral oil (vegetable, canola, or melted coconut oil)
  • 2 large eggs, room temperature

  • 1 1/2 cups (190g) all-purpose flour
  • 3/4 cup (150g) granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ginger

Instructions

  1. Preheat oven to 350°F (175°C). Prepare a 9×5-inch loaf pan by greasing or lining with parchment paper.
  2. In a large mixing bowl, mash the ripe bananas with a fork until mostly smooth with a few small chunks.
  3. Add the pumpkin puree, oil, eggs, and vanilla extract to the mashed bananas. Whisk vigorously until the mixture is smooth and uniform.
  4. In a separate small bowl, whisk together the flour, sugar, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
  5. Pour the dry ingredients into the wet ingredients. Using a rubber spatula, gently fold the mixture together until just combined and no streaks of flour remain. Do not overmix.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 55 to 60 minutes. Check at 50 minutes by inserting a toothpick into the center; it should come out clean or with a few moist crumbs.
  8. Allow the bread to cool in the pan for a few minutes, then transfer to a wire rack to cool completely before slicing.
