  • 1/3 cup honey or maple syrup
  • 1/4 cup vanilla protein powder
  • 1/4 cup ground flaxseed or chia seeds
  • 1/4 cup dark chocolate chips (optional)
  • 1/2 teaspoon vanilla extract
  • Pinch of sea salt

Instructions

  1. In a large mixing bowl, combine the rolled oats, protein powder, ground flaxseed (or chia seeds), and a pinch of sea salt. Stir to distribute evenly.
  2. Add the creamy peanut butter, honey (or maple syrup), and vanilla extract. Mix vigorously with a rubber spatula or wooden spoon until a thick, cohesive dough forms (about 1 minute).
  3. Fold in the dark chocolate chips until evenly distributed.
  4. If the dough is too sticky, refrigerate for 15-20 minutes. Line a baking sheet or plate with parchment paper.
  5. Using your hands or a small cookie scoop, scoop about 1 tablespoon of dough and roll into a smooth ball. Place on the prepared baking sheet. Repeat with remaining dough (makes 16-18 balls).
  6. Refrigerate for at least 30 minutes to firm up. Store in an airtight container in the refrigerator for up to 1 week, or freeze for up to 3 months.

Notes

If dough is too dry, add a teaspoon of honey or peanut butter. If too sticky, add a tablespoon more oats. For easier rolling, dampen hands with water. These taste even better after a day in the fridge.
