Buttery, crunchy, and sweet crispy rice treats topped with a peppermint white chocolate drizzle. A quick and easy holiday dessert that kids and adults love.

Ingredients

Scale
  • 6 tablespoons unsalted butter
  • 1 (10-ounce) bag mini marshmallows (about 4 cups)
  • 6 cups crispy rice cereal (like Rice Krispies)
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup white chocolate chips
  • 1 teaspoon coconut oil or vegetable oil
  • 1/2 teaspoon peppermint extract
  • 1/4 cup crushed candy canes or peppermint candies

Instructions

  1. Line a 9×13-inch baking dish with parchment paper, leaving overhang on two sides. Set aside.
  2. In a large pot over medium heat, melt the butter. Let it cook for 30-60 seconds after melting until it foams and turns light golden brown, then remove from heat.
  3. Add the mini marshmallows to the pot and stir constantly until completely melted and smooth, about 2-3 minutes.
  4. Stir in the vanilla extract and salt until well combined.
  5. Gently fold in the crispy rice cereal until evenly coated, being careful not to crush the cereal.
  6. Transfer the mixture to the prepared baking dish. Use a piece of parchment paper or a lightly greased spatula to press it into an even layer without pressing too hard. Let cool at room temperature for about 20 minutes.
  7. In a small microwave-safe bowl, combine the white chocolate chips and coconut oil. Microwave in 30-second intervals, stirring after each, until smooth and fully melted (about 1-2 minutes). Stir in the peppermint extract.
  8. Transfer the melted white chocolate to a Ziploc bag or piping bag. Snip a tiny corner and drizzle over the cooled bars. Immediately sprinkle crushed candy canes on top. Let the drizzle set completely, about 30 minutes at room temperature or 15 minutes in the fridge.
  9. Lift the bars out using the parchment overhang, place on a cutting board, and slice into squares or rectangles. Serve at room temperature.

Notes

For best results, use fresh marshmallows and do not overcook the marshmallow mixture. Butter your spatula when pressing the mixture into the pan to prevent sticking. The bars are best the day after making them. For a dairy-free version, use vegan butter and dairy-free white chocolate. For gluten-free, use certified gluten-free crispy rice cereal.
