Instructions

  1. Soften the cream cheese by letting it sit at room temperature for about 15 minutes or microwave for 15 seconds.
  2. Crack 3 large eggs into a mixing bowl and whisk vigorously until pale and frothy, about 2 minutes by hand.
  3. Stir the softened cream cheese into the eggs until mostly smooth with a few small lumps remaining.
  4. Gradually fold in 1/4 cup almond flour gently to keep the batter airy; avoid overmixing.
  5. Let the batter rest for 2-3 minutes to thicken and become fluffier.
