This fall copycat Starbucks brown sugar oat milk shaken espresso is a quick and easy homemade version of the beloved coffee shop drink. With simple ingredients and a secret shaking technique, it delivers a perfectly sweet, spiced, and creamy autumn-inspired coffee in just 5 minutes.

Ingredients

Scale
  • 2 tablespoons packed brown sugar
  • 2 tablespoons water
  • ¼ teaspoon ground cinnamon
  • ½ teaspoon vanilla extract
  • 2 shots espresso (about 3 ounces total)
  • 1 cup ice cubes
  • ¾ cup oat milk
  • Pinch of nutmeg or pumpkin pie spice (optional)
  • Dash of maple syrup (optional)

Instructions

  1. Make the brown sugar syrup: In a small saucepan, combine the packed brown sugar, water, and ground cinnamon. Heat over medium-low heat, stirring occasionally, until the sugar dissolves completely—about 2 minutes. Remove from heat and stir in the vanilla extract. Let it cool for 2-3 minutes.
  2. Brew your espresso: While the syrup cools, brew 2 shots of espresso (about 3 ounces total) using an espresso machine, Moka pot, or AeroPress.
  3. Combine in the shaker: Add the warm brown sugar syrup to a cocktail shaker or mason jar. Pour in the hot espresso and give it a quick swirl with a spoon to combine.
  4. Add the ice: Drop in the ice cubes.
  5. Shake it like you mean it: Secure the lid tightly and shake vigorously for about 15-20 seconds.
  6. Prepare your glass: Fill a serving glass with fresh ice cubes. Pour the oat milk into the glass, leaving about 2 inches of space at the top.
  7. Strain and serve: Pour the shaken espresso over the oat milk, straining out the ice from the shaker. Give it a gentle stir if desired, or leave it layered.
  8. Garnish and enjoy: Sprinkle a tiny pinch of cinnamon on top if desired. Serve immediately.

Notes

For extra foam, shake for 30 seconds. Use large ice cubes to prevent dilution. The brown sugar syrup can be made ahead and stored in the fridge for up to two weeks. For a hot version, skip the ice and shake the hot espresso with syrup, then pour into a mug and top with steamed oat milk.
