This Easy Crockpot Taco Soup with Ranch Seasoning is a dump-and-go recipe that delivers smoky, savory, and creamy comfort food. Perfect for hosting or a simple weeknight dinner, it combines ground beef, beans, corn, and a secret weapon—ranch seasoning—for an addictive flavor that will have everyone asking for seconds.

Ingredients

Scale
  • 1 pound ground beef (80/20 works great for flavor; you can drain excess fat after browning)
  • 1 medium yellow onion, diced (about 1 cup; adds sweetness and depth)
  • 3 cloves garlic, minced (fresh is best, but 1 teaspoon garlic powder works in a pinch)
  • 1 (15-ounce) can black beans, drained and rinsed (I prefer Bush’s for their firm texture)
  • 1 (15-ounce) can pinto beans, drained and rinsed (or use kidney beans if that’s what you have)
  • 1 (15-ounce) can corn, drained (fire-roasted corn adds a lovely smoky note)
  • 1 (14.5-ounce) can diced tomatoes with green chiles (Rotel is my go-to; use mild if you’re sensitive to heat)
  • 1 (14.5-ounce) can fire-roasted diced tomatoes (regular works too, but fire-roasted adds depth)
  • 1 (8-ounce) can tomato sauce (smooth and rich, helps thicken the soup)
  • 1 packet ranch seasoning mix (Hidden Valley is the classic; generic works fine too)
  • 1 packet taco seasoning mix (I like McCormick or Old El Paso; check sodium if you’re watching salt)
  • 2 cups beef broth (low-sodium recommended so you control the salt level)
  • 1/2 cup cream cheese, softened and cut into cubes (full-fat gives the creamiest result; Neufchâtel works too)
  • Optional toppings: shredded cheddar, sour cream, diced avocado, fresh cilantro, crushed tortilla chips, lime wedges

Instructions

  1. Brown the ground beef and onion. Heat a large skillet over medium-high heat. Add the ground beef and diced onion, breaking up the meat with a wooden spoon. Cook for 6-8 minutes until the beef is browned and the onion is translucent. Add the minced garlic in the last minute, stirring constantly until fragrant (about 30 seconds). Drain excess fat if desired—I usually leave a tablespoon for flavor.
  2. Transfer to the slow cooker. Dump the beef mixture into your crockpot. Don’t worry about scraping every last bit—a little fond (those browned bits) in the skillet is fine; you’ll deglaze it with broth later.
  3. Add the canned ingredients. To the slow cooker, add the drained black beans, pinto beans, corn, diced tomatoes with green chiles, fire-roasted tomatoes, and tomato sauce. No need to stir yet—just dump and go.
  4. Season it up. Sprinkle the ranch seasoning packet and taco seasoning packet evenly over the top. This prevents clumping better than dumping them in one spot.
  5. Pour in the broth. Add the beef broth. Give everything a good stir until the seasonings are mostly dissolved and the colors are uniform. You’ll see a beautiful reddish-brown broth starting to form.
  6. Add the cream cheese. Nestle the cubed cream cheese into the soup. Don’t stir it in yet—let it soften and melt naturally as the soup heats. This prevents graininess.
  7. Cook. Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours. About 30 minutes before serving, give the soup a good stir to incorporate the melted cream cheese. It should be smooth and slightly thickened.
  8. Taste and adjust. Ladle a small amount into a bowl and taste. Need more heat? Add a dash of cayenne or hot sauce. More tang? A squeeze of lime juice works wonders. Remember, flavors deepen as the soup sits.
  9. Serve with toppings. Ladle into bowls and let everyone customize their own. I love seeing the array of colors—bright green avocado, white sour cream, golden cheddar, red tomatoes, and crunchy tortilla chips.

Notes

Don’t skip browning the beef for best flavor. Layer cream cheese on top without stirring initially to prevent curdling. For a thicker soup, mash some beans before serving. This soup keeps well in the fridge for up to 5 days and freezes for up to 3 months.
