Easy Crockpot Bratwurst and Sauerkraut

A simple, tangy, and forgiving slow cooker dinner featuring bratwurst sausages and sauerkraut. This 3-ingredient meal is perfect for busy weeknights, game days, or when you need a quick, comforting meal with minimal prep.

  • 1216 oz pork or chicken bratwurst sausages
  • 16 oz jar refrigerated sauerkraut (packed in brine)
  • 1 large yellow onion, sliced into half-moons
  • 1/2 cup beer (lager or pilsner), apple cider, or chicken broth
  • Yellow mustard or spicy brown mustard for serving

Instructions

  1. Spray the inside of a 4- or 6-quart slow cooker with non-stick cooking spray.
  2. Slice the onion into thin half-moons and place them at the bottom of the slow cooker to create a bed for the sausages.
  3. Drain the sauerkraut in a colander to remove excess liquid, then spread it evenly over the onions.
  4. Arrange the bratwurst sausages on top of the sauerkraut layer.
  5. Pour the beer, apple cider, or broth over the sausages.
  6. Cover and cook on LOW for 6 to 8 hours, or on HIGH for 3 to 4 hours.
  7. Ensure sausages reach an internal temperature of 160°F (71°C). For browning, finish under the broiler for 2-3 minutes.
  8. Serve on buns or with a fork over the sauerkraut, topped with mustard.

Notes

Draining the sauerkraut is crucial to prevent a watery dish. If using pre-cooked smoked sausages, reduce cooking time to 2-3 hours on LOW. For a spicy kick, add jalapeño or red pepper flakes. For a vegan version, use plant-based brats and vegetable broth.
