Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice the chicken breasts into thin strips about 1/2 inch thick.
  3. Slice the bell peppers and onion into thin strips.
  4. In a large mixing bowl, combine the chicken strips, sliced peppers, and onion.
  5. Drizzle with 2 tablespoons olive oil and toss to coat evenly.
  6. Add the fajita seasoning: chili powder, smoked paprika, cumin, garlic powder, onion powder, crushed red pepper flakes (if using), salt, and pepper. Toss everything again until well coated.
  7. Spread the mixture in a single layer on a prepared rimmed sheet pan, avoiding overcrowding.
  8. Roast in the preheated oven for 20-25 minutes, flipping the chicken and tossing the veggies halfway through (around 12 minutes).
  9. Check for doneness: chicken should reach 165°F (74°C) and have golden-brown edges; peppers and onions should be tender with some char.
