  • 1 ½ cups (340 g) cottage cheese, full-fat or low-fat
  • ½ cup (120 g) plain Greek yogurt (optional)
  • 2 tablespoons (40 g) honey, raw or organic
  • 1 teaspoon (5 ml) vanilla extract
  • Zest of half a lemon (optional)
  • 1 tablespoon (15 g) chia seeds or flaxseeds (optional)
  • 1 cup (150 g) mixed fresh berries (blueberries, raspberries, strawberries, or blackberries)
  • ¼ cup (30 g) roughly chopped almonds or walnuts (optional)

Instructions

  1. Line a 9×13 inch (23×33 cm) baking sheet with parchment paper.
  2. In a mixing bowl, combine cottage cheese, Greek yogurt, honey, and vanilla extract. Blend briefly in a blender or food processor for 2-3 minutes until creamy but still slightly textured, or mix by hand.
  3. Stir in lemon zest and chia seeds or flaxseeds if using.
  4. Pour the mixture onto the lined baking sheet and spread evenly to about ¼ inch (6 mm) thickness using a spatula.
  5. Scatter mixed fresh berries evenly over the surface and add chopped nuts if desired. Press toppings gently into the creamy base.
  6. Freeze the baking sheet for at least 3 hours or until fully set and firm.
  7. Once frozen, lift the parchment paper out of the tray and cut the bark into squares or break into chunks.
  8. Serve immediately or store in an airtight container in the freezer.

Notes

Use small-curd cottage cheese for best texture. Blend briefly for a silky smooth base but avoid over-blending to prevent runniness. Fresh berries are preferred for juiciness; thaw and drain frozen berries if used. Let bark sit at room temperature for 3-5 minutes before cutting if it sticks to parchment. Store in airtight container in freezer up to two weeks.
