  • 2 tablespoons granulated sugar (25g)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. If using fresh pumpkin seeds, rinse them in a colander under cold water, rubbing gently to remove any stringy pumpkin flesh. Spread the clean seeds on a kitchen towel or paper towels and pat them very dry. Let them air dry for a few minutes.
  3. Melt the butter in a small microwave-safe bowl for 20-30 seconds until fully melted. Let it cool for a minute.
  4. In a medium mixing bowl, combine the melted butter, granulated sugar, ground cinnamon, and salt. Stir until the sugar and cinnamon are fully incorporated into the butter, forming a thick, grainy paste.
  5. Add the dried pumpkin seeds to the bowl with the butter-sugar mixture. Use a spatula or spoon to toss and stir until every seed is coated.
  6. Pour the coated seeds onto the prepared baking sheet and spread them out in a single, even layer. Gently separate any clumps with your fingers or the spatula.
  7. Roast for 10-12 minutes, checking at the 10-minute mark. The seeds should be golden brown and fragrant. Watch carefully to prevent burning.
  8. Remove the baking sheet from the oven and let the seeds cool completely on the pan for at least 10-15 minutes. They will continue to crisp up as they cool.
  9. Once cooled, use your hands to gently break apart any clusters of seeds that stuck together during roasting.
