Easy Cinnamon Apple Cider Mimosa Float: Kid-Approved

A quick and easy non-alcoholic float made with apple cider, vanilla ice cream, and a cinnamon stick. Perfect for turning an ordinary day into a special treat that kids and adults will love.

Ingredients

  • 2 cups (480 ml) apple cider, unfiltered
  • 4 large scoops (about 1 cup / 240 ml total) vanilla ice cream
  • 4 cinnamon sticks
  • 1 cup (240 ml) sparkling apple cider or ginger ale, chilled
  • 1/2 teaspoon ground cinnamon (for garnish)
  • Whipped cream (optional, for topping)
  • Apple slices (optional, for garnish)

Instructions

  1. Chill your glasses in the freezer for about 10 minutes before starting.
  2. In a liquid measuring cup or small pitcher, gently combine 2 cups apple cider and 1 cup sparkling apple cider (or ginger ale). Stir gently to avoid losing bubbles.
  3. Remove chilled glasses from the freezer. Place one large scoop of vanilla ice cream into each glass.
  4. Slowly pour the apple cider mixture into each glass, pouring around the ice cream scoop. Fill almost to the top, leaving about an inch of space.
  5. Gently insert a cinnamon stick into each glass, pushing it down into the ice cream and liquid.
  6. If using, top each float with a generous dollop of whipped cream.
  7. Using a fine-mesh sieve, lightly dust the top of each float with a pinch of ground cinnamon.
  8. If using, cut a small slit in each apple slice and perch it on the rim of the glass. Serve immediately with a straw and a long spoon.

Notes

This float is best served immediately. For a dairy-free version, use coconut or oat milk vanilla ice cream. For a grown-up version, swap sparkling apple cider for Prosecco or champagne. Do not make ahead; assemble just before serving.
