Ingredients

  • Caesar dressing:

  • – 1 tablespoon fresh lemon juice
  • – 1 small clove garlic, grated (or 1/2 teaspoon garlic powder)
  • – 1 teaspoon Worcestershire sauce
  • – 1 teaspoon Dijon mustard
  • – 2 tablespoons grated Parmesan cheese
  • – Salt and black pepper to taste
  • Cherry tomatoes or sliced cucumbers (optional)
  • Fresh fruit like apple slices, grapes, or berries

Instructions

  1. Cook and prep the chicken: Season and grill or bake chicken breast at 375°F for 6-7 minutes per side until cooked through. Let rest, then chop into 1/2 inch pieces. Use leftovers if available.
  2. Prepare the Caesar dressing: Whisk together mayonnaise, Greek yogurt, lemon juice, garlic, Worcestershire sauce, Dijon mustard, Parmesan cheese, salt, and pepper until creamy and smooth.
  3. Chop the romaine lettuce: Wash and dry thoroughly, then chop or tear into bite-sized pieces.
  4. Assemble the salad portion: Layer chopped romaine, chicken pieces, and sprinkle Parmesan in the bento box. Keep croutons separate.
  5. Add veggies and fruit: Fill remaining sections with cherry tomatoes, cucumber slices, and fresh fruit.
  6. Pack the dressing: Pour Caesar dressing into a small airtight container to keep separate.
  7. Seal and refrigerate: Close all containers tightly and refrigerate until ready to eat.
