A quick and fresh appetizer featuring cherry tomatoes, fresh mozzarella, and basil on mini skewers, finished with a homemade sweet balsamic reduction. Perfect for parties and casual gatherings.

Ingredients

Scale
  • 1 pint cherry tomatoes (about 250 grams), washed and dried
  • 8 ounces fresh mozzarella balls (bocconcini), drained
  • 2025 fresh basil leaves, washed and patted dry
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons honey or maple syrup
  • ½ cup (120 ml) balsamic vinegar
  • Salt and freshly ground black pepper, to taste
  • 4-inch (10 cm) wooden or bamboo mini skewers

Instructions

  1. Prepare the balsamic reduction by pouring ½ cup balsamic vinegar and 2 tablespoons honey into a small saucepan.
  2. Heat over medium heat, stirring occasionally, until the mixture reduces to about half its volume and thickens to a syrupy consistency (about 10-12 minutes). Reduce heat if bubbling vigorously to avoid burning.
  3. Thread one cherry tomato onto each mini skewer, followed by a basil leaf (folded if large) and a mozzarella ball. Repeat layering if skewers are long.
  4. Place the assembled skewers in a mixing bowl or on a serving platter.
  5. Drizzle 2 tablespoons extra virgin olive oil over the skewers and sprinkle lightly with salt and freshly ground black pepper. Toss gently to coat evenly without squishing the ingredients.
  6. Drizzle the cooled balsamic reduction over the skewers just before serving. Garnish with extra basil leaves if desired.

Notes

Use firm cherry tomatoes to avoid mushiness. Drain mozzarella well to prevent sogginess. Assemble skewers close to serving time to keep basil fresh. Store balsamic reduction separately if preparing ahead. Toothpicks can substitute skewers but affect presentation.
