  • 1 cup (240ml) full-fat Greek yogurt
  • 1 small cucumber, grated or finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons (30ml) fresh lemon juice
  • 2 tablespoons (30ml) extra virgin olive oil
  • Salt and black pepper, to taste
  • Optional: fresh herbs like dill or parsley, chopped

Instructions

  1. In a mixing bowl, combine 2 tablespoons olive oil, 2 tablespoons fresh lemon juice, minced garlic, salt, and pepper. Whisk until well mixed.
  2. Add chicken breasts to the marinade, coating evenly. Cover and refrigerate for at least 15 minutes and up to 2 hours.
  3. Grate or finely chop the cucumber and squeeze out excess moisture with a towel.
  4. In a bowl, mix the cucumber with Greek yogurt, 1 clove minced garlic, a pinch of salt, and optional chopped dill or parsley. Stir until smooth and chill in the fridge.
  5. Heat a non-stick skillet or grill pan over medium-high heat. Cook the marinated chicken breasts for 6-7 minutes per side until browned and cooked through (internal temperature 165°F / 74°C).
  6. Transfer chicken to a cutting board and let rest for 5 minutes, then slice into strips or cubes.
  7. Assemble bowls by arranging sliced chicken and spooning over the tzatziki drizzle. Garnish with fresh herbs if desired. Optionally add sides like cherry tomatoes, olives, or cooked quinoa.

Notes

Marinate chicken for at least 15 minutes but no longer than 2 hours for best tenderness. Drain cucumber well to keep tzatziki thick. Rest chicken after cooking to retain juices. Use a meat thermometer to ensure chicken reaches 165°F (74°C).
