  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 packet (1 oz or 28g) taco seasoning
  • 1 can (15 oz or 425g) diced tomatoes with green chiles
  • 1 can (15 oz or 425g) tomato sauce
  • 1 can (15 oz or 425g) black beans, drained and rinsed
  • 1 can (15 oz or 425g) kidney beans, drained and rinsed
  • 1 can (15 oz or 425g) corn, drained
  • 2 cups (480ml) beef broth
  • Shredded cheddar cheese (for serving)
  • Sour cream (for serving)
  • Tortilla chips or strips (for serving)
  • Fresh cilantro, chopped (for serving)
  • Diced avocado (for serving)
  • Lime wedges (for serving)

Instructions

  1. Brown the beef: Place a large pot over medium-high heat. Add ground beef and diced onion. Cook, breaking up the meat, until browned and onion is soft (5-7 minutes). Drain excess fat if needed.
  2. Add garlic and seasoning: Stir in minced garlic and taco seasoning. Cook for 30-60 seconds until fragrant.
  3. Add tomatoes and sauce: Pour in diced tomatoes with green chiles (undrained) and tomato sauce. Stir, scraping up browned bits from the bottom.
  4. Add beans, corn, and broth: Add drained black beans, kidney beans, corn, and beef broth. Stir to combine.
  5. Bring to a boil: Turn heat to high and bring soup to a boil (3-4 minutes).
  6. Simmer and thicken: Reduce heat to medium-low and simmer uncovered for 10-15 minutes, stirring occasionally, until slightly thickened.
  7. Taste and adjust: Add salt if needed or a squeeze of lime for brightness. Adjust consistency with more broth if too thick, or simmer longer if too thin.
  8. Serve and top: Ladle into bowls and let everyone customize with desired toppings.

Notes

For a thicker soup, mash some of the beans before adding. For a spicier version, add diced jalapeño with the onion or chipotle powder with the seasoning. This soup is even better the next day. Store in the refrigerator for 4-5 days or freeze for up to 3 months.
