  • 1 large bag restaurant-style tortilla chips
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 can (15 oz) black beans, drained and rinsed
  • 1/2 cup sliced jalapeños
  • 1/2 cup finely diced red onion
  • 1/4 cup chopped cilantro
  • 1/2 cup sour cream (optional)
  • 1/2 cup guacamole (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine the pork shoulder, BBQ sauce, smoked paprika, garlic powder, onion powder, salt, and black pepper. Mix well until the pork is evenly coated.
  3. Spread the seasoned pork in a single layer on a separate baking sheet. Bake for 10-15 minutes until edges are slightly crispy. Remove and set aside.
  4. On a large baking sheet, spread a single layer of tortilla chips, avoiding too much overlap.
  5. Sprinkle half of the cheddar and Monterey Jack cheese over the chips.
  6. Distribute the crispy pork and black beans evenly over the cheese.
  7. Sprinkle the remaining cheese over the pork and beans.
  8. Scatter the sliced jalapeños and diced red onion over the top.
  9. Bake for 10-12 minutes until the cheese is bubbly and golden brown.
  10. Remove from the oven and immediately top with fresh cilantro, sour cream, and guacamole. Serve hot.

Ensure cheese is freshly shredded to prevent anti-caking agents from affecting melt. Use sturdy restaurant-style chips to hold toppings.
