These air fryer chicken wings are incredibly crispy, tossed in a sticky, sweet, and spicy honey sriracha glaze. They come together in about 30 minutes with simple ingredients, making them the perfect game-day appetizer or weeknight treat.

  • 1 tablespoon baking powder (not baking soda)
  • 1 teaspoon kosher salt (use ½ teaspoon if using table salt)
  • ½ teaspoon black pepper, freshly ground
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ⅓ cup honey
  • 3 tablespoons sriracha sauce (adjust to taste)
  • 2 tablespoons low-sodium soy sauce (or tamari/coconut aminos for gluten-free)
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon rice vinegar (apple cider vinegar works in a pinch)
  • 1 clove garlic, minced
  • 2 tablespoons green onions, thinly sliced (for garnish)
  • 1 tablespoon sesame seeds, toasted (for garnish)

Instructions

  1. Prep the wings: Pat the chicken wings completely dry with paper towels. If using whole wings, cut them at the joints to separate drumettes from flats. Save wing tips for stock if desired.
  2. Season the wings: In a large mixing bowl, whisk together baking powder, kosher salt, black pepper, garlic powder, and onion powder. Add the dried wings and toss until evenly coated. Let rest for 10 minutes at room temperature.
  3. Preheat the air fryer to 380°F (193°C) for 3-5 minutes.
  4. Arrange the wings in the air fryer basket in a single layer, leaving about ½ inch of space between each piece. Do not overcrowd; cook in batches if necessary.
  5. Cook at 380°F for 12 minutes. Flip each wing using tongs, then cook for another 10-12 minutes until golden brown and crispy. Internal temperature should reach 165°F (74°C). For extra crispiness, increase to 400°F for the last 2-3 minutes.
  6. While wings cook, make the sauce: In a medium bowl, whisk together honey, sriracha, soy sauce, melted butter, rice vinegar, and minced garlic. Adjust sweetness or spiciness to taste.
  7. As soon as wings are done, transfer them to a large bowl. Pour the sauce over the hot wings and toss immediately with tongs until evenly coated.
  8. Transfer to a serving platter, garnish with sliced green onions and toasted sesame seeds. Serve immediately while hot and crispy.

Notes

Pat wings very dry for maximum crispiness. Do not use baking soda instead of baking powder. For best results, cook in batches to avoid overcrowding. Sauce wings just before serving to maintain crunch. Leftovers can be reheated in the air fryer at 350°F for 3-4 minutes.
