Instructions

  1. Pat the boneless chicken thighs dry with paper towels. Season both sides generously with salt and black pepper. (5 minutes)
  2. Heat a heavy-bottomed skillet over medium-high heat. Add olive oil and heat until shimmering but not smoking. (2 minutes)
  3. Place the chicken thighs in the pan, leaving space between each piece. Cook undisturbed for 5-6 minutes until the bottom side is golden and crispy. (5-6 minutes)
  4. Flip the chicken thighs using tongs. Immediately add butter and minced garlic to the pan. Stir garlic gently around the chicken as butter melts. (1 minute)
  5. Tilt the pan and spoon the garlic butter over the chicken repeatedly. Cook for another 5-6 minutes until chicken reaches an internal temperature of 165°F (74°C). (5-6 minutes)
  6. Sprinkle dried Italian herbs over the chicken. Remove pan from heat and drizzle with fresh lemon juice. Toss chopped parsley on top. (1-2 minutes)
  7. Transfer chicken to a plate and let rest for a few minutes to lock in juices. Serve immediately. (3 minutes)
