Instructions

  1. Preheat oven to 400°F (200°C). Scrub potatoes clean, pat dry, and prick each 4-5 times with a fork.
  2. Rub each potato with olive oil and sprinkle generously with salt. Place directly on oven rack or on a baking sheet. Bake for 45-55 minutes until skins are crisp and a knife slides in easily.
  3. While potatoes bake, melt butter in a large skillet over medium heat. Add sliced onions and salt. Reduce heat to medium-low and cook, stirring every 5 minutes, for 25-30 minutes until onions are soft and golden brown.
  4. Add garlic and thyme to onions; cook 1 minute until fragrant. Pour in white wine (or extra broth) and scrape up browned bits from pan. Simmer 2 minutes until reduced by half. Sprinkle flour over onions and stir for 1 minute.
  5. Slowly pour in beef broth while stirring. Bring to a simmer and cook 3-4 minutes until mixture thickens slightly. Taste and adjust seasoning. Set aside.
  6. When potatoes are done, let cool 5 minutes. Cut each in half lengthwise. Carefully scoop out flesh into a mixing bowl, leaving a 1/4-inch thick shell. Place potato skins back on baking sheet, cut side up.
  7. Mash potato flesh with a fork or potato masher. Add caramelized onion mixture and 1 cup shredded Gruyère. Stir until well combined. If too thick, add a splash of warm broth or milk.
  8. Spoon filling back into potato skins, mounding slightly. Sprinkle remaining Gruyère, mozzarella, and Parmesan over the top.
  9. Return stuffed potatoes to 400°F oven. Bake 10-15 minutes until cheese is melted, bubbly, and starting to brown. For extra crispy tops, broil for the last 2 minutes, watching carefully.
  10. Remove from oven and let rest 2 minutes. Sprinkle with fresh parsley if using. Serve hot with extra black pepper.
