  • 1 tbsp fresh chives or parsley, finely chopped (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat. If available, place a wire rack on the sheet for extra crispiness.
  2. In a large mixing bowl, combine ground chicken, panko breadcrumbs, egg, garlic powder, onion powder, salt, and black pepper. Mix gently until just combined to avoid tough meatballs.
  3. Shape the mixture into golf ball-sized meatballs, about 1.5 inches in diameter, making roughly 18 meatballs. Place them on the wire rack or directly on the lined baking sheet, spacing them apart.
  4. Brush or drizzle the meatballs lightly with olive oil or avocado oil to help create a golden, crispy crust.
  5. Bake for 18-20 minutes, flipping each meatball halfway through at about 10 minutes. Ensure the internal temperature reaches 165°F (75°C).
  6. While baking, warm the buffalo sauce slightly in the microwave or on the stove to make tossing easier.
  7. Once baked, transfer the meatballs to a large bowl and gently toss with the warmed buffalo sauce until evenly coated.
  8. Prepare the creamy blue cheese dip by whisking together blue cheese crumbles, sour cream, mayonnaise, lemon juice, salt, and pepper. Garnish with chopped chives or parsley if desired.
  9. Serve the crispy buffalo chicken meatballs immediately with the creamy blue cheese dip and optional celery or carrot sticks.
