A quick and easy game day appetizer that wraps classic buffalo chicken dip in flaky puff pastry, creating crispy, spicy, and creamy handheld bites perfect for parties.

  • 2 sheets puff pastry, thawed but cold
  • 1 block (8 oz) cream cheese, softened
  • 2 cups cooked shredded chicken, dry
  • 1/2 cup buffalo sauce (e.g., Frank’s RedHot)
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons ranch dressing
  • 1 large egg, beaten with 1 tablespoon water
  • Blue cheese dressing, for serving

Instructions

  1. Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. In a large bowl, combine softened cream cheese, shredded chicken, buffalo sauce, ranch dressing, and half of the mozzarella cheese. Mix until smooth.
  3. On a lightly floured surface, unroll puff pastry sheets and roll each into a 12×12 inch rectangle.
  4. Cut each rectangle in half diagonally to create two large triangles, then cut each large triangle into three smaller triangles (24 total).
  5. Place a tablespoon of the chicken mixture near the wide base of each triangle.
  6. Roll the dough up towards the point, tucking in the ends to secure the filling. Place seam-side down on the baking sheet.
  7. Brush the tops with egg wash and sprinkle with the remaining mozzarella cheese.
  8. Bake for 15-18 minutes, rotating the pan halfway through, until puffed and golden brown.
  9. Let cool for 5 minutes before serving with blue cheese dressing.

Notes

Keep the puff pastry cold to ensure flakiness. Ensure chicken is dry to prevent soggy dough. Do not overfill the bites to avoid leakage. Can be frozen before or after baking.
