  • 2 packets active dry yeast (about 14g)

  • Coarse sea salt (for sprinkling)
  • 1 egg, whisked with 1 tablespoon water (for egg wash)
  • 2 cups sharp cheddar cheese, freshly grated
  • 1/2 cup lager or pilsner beer
  • 2 tablespoons butter (for dip)
  • 2 tablespoons all-purpose flour (for dip)
  • 1 cup whole milk
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Worcestershire sauce
  • A pinch of cayenne pepper

Instructions

  1. In a small bowl, combine warm water and sugar. Sprinkle yeast on top and let sit for 5-10 minutes until foamy.
  2. In a large mixing bowl, combine flour and salt. Add yeast mixture and melted butter. Mix until a shaggy dough forms.
  3. Knead the dough for 7-10 minutes until smooth and elastic (passing the windowpane test).
  4. Place dough in a greased bowl, cover, and let rise in a warm spot for 20-30 minutes until puffed.
  5. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  6. Punch down dough and roll out into a 1/2-inch thick rectangle. Cut into 1.5-inch squares or balls.
  7. Bring a large pot of water to a boil, add baking soda, and reduce to a simmer.
  8. Boil pretzel bites in batches for 30 seconds per side. Remove with a slotted spoon and place on the baking sheet.
  9. Brush boiled pretzels with egg wash and sprinkle generously with coarse sea salt.
  10. Bake for 12-15 minutes until deep golden brown.
  11. While pretzels bake, melt 2 tablespoons butter in a saucepan. Whisk in 2 tablespoons flour to make a roux and cook for 1 minute.
  12. Slowly whisk in milk and beer. Stir constantly until thickened (about 5 minutes).
  13. Remove from heat and stir in grated cheese, mustard, garlic powder, Worcestershire sauce, and cayenne until smooth.

Notes

Use freshly grated cheese for the dip to ensure smooth melting; pre-shredded cheese contains anti-caking agents. Do not overcrowd the pot when boiling pretzels. If the dough is sticky, wet your hands instead of adding more flour. Serve warm for best texture.
