  • 1 tablespoon aluminum-free baking powder
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly cracked black pepper
  • 2 tablespoons chipotle peppers in adobo sauce, finely minced
  • ¼ cup raw honey
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1 tablespoon apple cider vinegar
  • 2 cloves garlic, minced
  • Juice of half a lime
  • Chopped cilantro (optional garnish)
  • Green onions, sliced (optional garnish)

Instructions

  1. Pat chicken wings completely dry with paper towels to remove moisture.
  2. Place dried wings in a large bowl and sprinkle with baking powder, salt, and black pepper. Toss well until every wing is evenly coated.
  3. Line a baking sheet with parchment paper or a wire rack. Arrange wings in a single layer, ensuring they are not touching.
  4. Place the sheet in the refrigerator, uncovered, for at least 30 minutes (up to 2 hours) to air-dry the skin.
  5. Preheat oven to 400°F (200°C).
  6. Bake wings on the middle rack for 40-45 minutes, flipping halfway through, until golden brown and crispy. Internal temperature should reach 165°F (74°C).
  7. While wings bake, combine minced chipotle peppers, honey, soy sauce, apple cider vinegar, garlic, and lime juice in a small saucepan over medium heat.
  8. Whisk constantly until honey dissolves and sauce simmers gently for 2-3 minutes until slightly thickened. Remove from heat.
  9. Remove wings from oven and immediately transfer to a large mixing bowl.
  10. Pour warm glaze over hot wings and toss vigorously until evenly coated.
  11. Serve immediately while hot and crispy.

Notes

Do not use baking soda as it will taste metallic. Ensure wings are not crowded on the pan to prevent steaming. If you don’t have a wire rack, crumple aluminum foil into balls to lift wings. For less heat, remove seeds from chipotle peppers. Reheat leftovers in a 400°F oven for 10 minutes to restore crispiness.
