These crispy bacon-wrapped jalapeño poppers are stuffed with a creamy blend of cream cheese and sharp cheddar, seasoned with garlic powder and smoked paprika. Perfect as an easy, crowd-pleasing appetizer with a spicy kick and smoky flavor.

  • 12 medium fresh jalapeños, washed and halved lengthwise
  • 8 oz (225 g) cream cheese, softened
  • ½ cup (50 g) sharp cheddar cheese, shredded
  • 12 thin slices bacon
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste
  • Optional: pinch of cayenne pepper for extra heat

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice each jalapeño lengthwise and carefully scoop out the seeds and membranes. Pat dry with paper towels.
  3. In a mixing bowl, combine softened cream cheese, shredded sharp cheddar, garlic powder, smoked paprika, salt, pepper, and optional cayenne pepper. Stir until smooth and well blended.
  4. Spoon the cheese mixture into each jalapeño half, filling the cavity without overflowing.
  5. Wrap each stuffed jalapeño half tightly with a slice of bacon, securing the end underneath. Use toothpicks if necessary.
  6. Place the poppers on a wire rack set over a rimmed baking sheet or directly on a baking sheet lined with parchment paper or a silicone mat, spacing them slightly apart.
  7. Bake for 20-25 minutes, turning once halfway through, until bacon is golden and crisp and cheese is bubbling.
  8. Remove from oven and let rest for about 5 minutes to allow cheese to set.
  9. Serve warm, optionally with dipping sauces like ranch, blue cheese dressing, or chipotle mayo.

Notes

Drain and dry jalapeños well to avoid soggy bacon. Use thin bacon slices for even crisping. Do not overfill jalapeños to prevent bursting. Rotate poppers halfway through baking for even crispiness. Let rest before serving to avoid burns from molten cheese. Gloves or thorough hand washing recommended to avoid irritation from jalapeño oils. Can broil 1-2 minutes at the end for extra crispiness. Can be made in an air fryer at 375°F for 10-12 minutes, turning halfway.
