  • 1 cup panko breadcrumbs
  • ½ cup finely grated Parmesan cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • ½ teaspoon fine sea salt
  • ¼ teaspoon freshly ground black pepper
  • Olive oil spray

Instructions

  1. Preheat your air fryer to 400°F (200°C).
  2. Wash and slice the zucchini into ¼-inch thick rounds. Pat dry thoroughly.
  3. In one medium bowl, whisk the eggs until frothy. In another bowl, combine panko breadcrumbs, grated Parmesan, garlic powder, onion powder, paprika, salt, and black pepper.
  4. Dip each zucchini slice into the egg wash, letting excess drip off, then press into the breadcrumb mixture to coat both sides. Place on a clean plate.
  5. Arrange coated slices in a single layer in the air fryer basket, leaving space between each. Lightly spray tops with olive oil.
  6. Air fry at 400°F for 6 minutes. Flip each slice with tongs, spray the other side with oil, and cook for another 2-4 minutes until golden brown and crispy.
  7. Transfer to a wire rack or paper towel-lined plate and let rest for 2-3 minutes before serving.

Notes

Pat zucchini dry thoroughly to prevent soggy coating. Work in batches to avoid overcrowding the air fryer basket. For best results, serve immediately. Leftovers can be reheated in the air fryer at 350°F for 2-3 minutes.
