Ingredients

Scale
  • 1 large round loaf of bread (sourdough or Italian)
  • 4 tbsp unsalted butter, melted
  • 4 cloves garlic, minced
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1/4 cup chicken broth
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded parmesan cheese
  • 10 oz frozen spinach, thawed and squeezed dry
  • 1 can (14 oz) artichoke hearts, drained and quartered
  • 2 green onions, sliced
  • 1/2 tsp red pepper flakes
  • 1 tbsp fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Cut off the top third of the bread loaf, leaving a 1-inch crust shell. Scoop out some interior bread to create a hollow bowl.
  3. Brush the inside and edges of the bread bowl generously with melted butter.
  4. Pre-bake the bread bowl for 10 minutes to toast it and create a moisture barrier. Remove and set aside.
  5. In a mixing bowl, combine cream cheese, sour cream, and mayonnaise until smooth.
  6. Stir in minced garlic, lemon juice, red pepper flakes, and half of the green onions.
  7. Fold in the squeezed spinach and drained artichoke hearts until evenly distributed.
  8. Spoon the dip mixture into the pre-baked bread bowl and spread evenly.
  9. Top with mozzarella and parmesan cheese.
  10. Bake for 15-20 minutes until cheese is bubbly and golden brown.
  11. Cool for 5 minutes before serving with extra bread pieces.

Notes

Ensure spinach is squeezed completely dry to prevent a watery dip. Let cream cheese come to room temperature for a smoother texture. Pre-baking the bread is crucial to prevent sogginess. If cheese browns too quickly, cover loosely with foil.
