  • 5 pounds Yukon Gold potatoes, peeled and cut into 1-inch chunks
  • 1 cup whole milk, warmed
  • 1 cup heavy cream, warmed
  • ½ cup unsalted butter, cut into small pieces
  • 1 ½ teaspoons salt, plus more to taste
  • ½ teaspoon white pepper
  • 2 cloves garlic, minced (optional)
  • 2 tablespoons fresh chives, chopped
  • Extra butter pats for serving
  • Fresh parsley, finely chopped

Instructions

  1. Prep the potatoes: Peel all 5 pounds of Yukon Gold potatoes and cut them into 1-inch chunks. Rinse the cut potatoes in cold water to remove excess starch. Drain well.
  2. Season the potatoes: Place the potato chunks in your slow cooker. Add 1 ½ teaspoons of salt, ½ teaspoon of white pepper, and the minced garlic (if using). Toss everything together with your hands to distribute the seasonings evenly.
  3. Add the butter: Scatter the ½ cup of butter pieces over the top of the potatoes. Do not stir.
  4. Cook on low: Cover the slow cooker and cook on LOW for 4-5 hours, or on HIGH for 2-3 hours. The potatoes are ready when they are fork-tender. Do not lift the lid during the first 3 hours of cooking.
  5. Warm the dairy: About 15 minutes before the potatoes are done, warm the milk and heavy cream together in a small saucepan over low heat until warm to the touch.
  6. Mash the potatoes: Once the potatoes are tender, transfer them to a large mixing bowl (or mash directly in the slow cooker if it is oven-safe). Pour in about half of the warm milk and cream mixture. Mash with a hand masher until the liquid is absorbed. Add the remaining liquid and continue mashing until you reach your desired consistency. Taste and adjust salt and pepper as needed.
  7. Final touch: Fold in the chopped chives and a little extra butter if desired. Transfer the mashed potatoes back to the slow cooker to keep warm until serving.

Notes

Do not over-mash the potatoes to avoid a gluey texture. Warm the dairy before adding to keep the potatoes hot. For best results, use Yukon Gold potatoes. If holding for more than an hour, stir in an extra splash of warm milk before serving.
