  • 1 cup garlic scapes, chopped into 2-inch pieces
  • 1 ½ cups canned white beans (cannellini or great northern), drained and rinsed
  • 3 tablespoons extra virgin olive oil
  • Juice of 1 medium lemon (about 2 tablespoons)
  • 1 small garlic clove, minced (optional)
  • ½ teaspoon ground cumin
  • ¾ teaspoon salt, or to taste
  • ¼ teaspoon freshly ground black pepper
  • 23 tablespoons water or aquafaba (to thin the dip)
  • 1 tablespoon fresh parsley or cilantro, chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly oil it.
  2. Rinse and chop about 1 cup of garlic scapes into 2-inch pieces. Spread them evenly on the baking sheet. Toss with 1 tablespoon of olive oil and a pinch of salt.
  3. Roast the garlic scapes in the oven for 12–15 minutes until tender and slightly caramelized with a golden hue.
  4. Drain and rinse the canned white beans to remove excess sodium and any tinny flavor. Set aside.
  5. Add the roasted garlic scapes and white beans to a food processor or blender along with 2 tablespoons olive oil, lemon juice, ground cumin, minced garlic (if using), salt, and pepper.
  6. Blend until smooth, pulsing and scraping down the sides as needed. Gradually add 2–3 tablespoons of water or aquafaba to reach desired creamy consistency.
  7. Taste and adjust seasoning with more lemon juice or salt if needed. Optionally, drizzle olive oil on top when serving.
  8. Transfer the dip to a serving bowl and garnish with fresh chopped parsley or cilantro. Serve chilled or at room temperature with pita chips, sliced veggies, or toasted bread.

Notes

Roasting the garlic scapes mellows their sharpness and adds a subtle sweetness. Rinsing canned beans removes excess sodium and canned flavor. Add liquids gradually to avoid diluting flavor. The dip can be made ahead and tastes better after flavors meld. For a smoky flavor, add smoked paprika or char scapes before roasting.
