This creamy roasted garlic cauliflower mashed potatoes recipe is a delicious low-carb alternative to traditional mashed potatoes. Made with roasted garlic, butter, and heavy cream, it’s a quick and easy side dish that’s perfect for family meals and holiday gatherings.

  • 1 large head of cauliflower (about 2 pounds or 900g), cut into small florets
  • 1 whole head of garlic
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 1/4 cup heavy cream (60ml)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1 tablespoon fresh chives or parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Slice off the top quarter-inch of the garlic head to expose the cloves. Drizzle with 1 tablespoon olive oil, wrap in aluminum foil, and roast for 35-40 minutes until soft and golden brown.
  2. While the garlic roasts, wash the cauliflower and cut into small, uniform florets (about 6 cups).
  3. Steam the cauliflower in a steamer basket over boiling water for 8-10 minutes until fork-tender. Drain well and let sit in a colander to release excess moisture.
  4. Let the roasted garlic cool for 5 minutes, then squeeze the soft cloves out of their skins.
  5. In a food processor, combine the steamed cauliflower, roasted garlic cloves, butter, heavy cream, salt, and pepper. Pulse a few times, then process continuously for 30-45 seconds until smooth and creamy. Scrape down the sides halfway through.
  6. Taste and adjust seasoning with more salt or pepper if needed. For extra creaminess, add another tablespoon of butter or a splash more cream.
  7. Serve immediately, garnished with fresh chives or parsley if desired.

Notes

Don’t boil the cauliflower; steaming keeps it from getting waterlogged. Dry the cauliflower well after steaming. Roast the garlic until truly soft and jammy. Don’t over-process the mash to avoid a gummy texture. Season in layers, tasting and adjusting at the end.
