  • 1 tablespoon (12g) chia seeds (optional)
  • 1 teaspoon honey or maple syrup (optional)
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon vanilla extract (optional)

Instructions

  1. Mash one ripe banana in a medium bowl with a fork until smooth but still slightly chunky (about 2 minutes).
  2. Stir in 2 tablespoons of creamy peanut butter until fully combined and glossy. Warm peanut butter for 10 seconds if needed to blend smoothly.
  3. Add 1/2 cup (120ml) milk and 1/4 cup (60g) Greek yogurt to the bowl. Stir gently until creamy and pourable (1-2 minutes).
  4. Add 1/2 cup (45g) rolled oats, 1 tablespoon (12g) chia seeds (if using), 1 teaspoon honey or maple syrup, 1/4 teaspoon cinnamon, and 1/4 teaspoon vanilla extract. Stir thoroughly to coat oats evenly.
  5. Transfer the mixture into a clean mason jar or airtight container. Seal tightly and refrigerate overnight or for at least 6 hours.
  6. The next morning, stir the oats. Add a splash of milk if too thick. Top with extra banana slices, chopped nuts, or a drizzle of peanut butter if desired.

Notes

Use ripe bananas for natural sweetness and easier mashing. Slightly warm peanut butter to blend smoothly. Chia seeds add thickness and fiber but are optional.
