  • 1/4 cup (64g) creamy peanut butter
  • 1 cup (240ml) milk (any kind)
  • 1/2 cup (120g) Greek yogurt
  • 2 tablespoons (30ml) honey or maple syrup
  • 1 tablespoon (12g) chia seeds (optional)
  • 1 teaspoon (5ml) vanilla extract
  • Pinch of salt

Instructions

  1. Mash the banana in a mixing bowl until smooth with only tiny lumps remaining.
  2. Add the peanut butter and stir until fully combined into a thick, tan paste.
  3. Pour in the milk and Greek yogurt, then whisk until the peanut butter-banana mixture is fully dissolved.
  4. Add the honey or maple syrup and vanilla extract, then stir to combine. Taste the liquid—it should be slightly sweeter than desired final sweetness.
  5. Stir in the rolled oats and chia seeds (if using) until evenly distributed. The liquid should mostly cover the oats; adjust with extra milk or oats if needed.
  6. Divide the mixture evenly into two mason jars or airtight containers, leaving about an inch of headspace.
  7. Refrigerate for at least 4 hours, preferably overnight (8-12 hours for best texture).
  8. In the morning, stir the oats. If too thick, add a splash of milk. Serve cold or microwave for 45-60 seconds for warm oats. Top with sliced banana, a drizzle of peanut butter, and other desired toppings.

Notes

For best texture, use very ripe bananas and let the oats rest overnight. The chia seeds are optional but help thicken the oats. If using quick oats, reduce milk by 2 tablespoons and refrigerate for only 4 hours. For a vegan version, use plant-based milk and yogurt, and maple syrup instead of honey. Store in the refrigerator for up to 5 days; do not freeze.
