These creamy overnight peanut butter protein oats are the perfect make-ahead breakfast. With a secret technique for smooth protein powder incorporation, they’re rich, satisfying, and ready in just 5 minutes of prep.

Ingredients

  • 1 cup (90g) rolled oats
  • 1 cup (240ml) milk (dairy or non-dairy)
  • 2 tablespoons (32g) creamy peanut butter
  • 1 scoop (about 30g) vanilla protein powder
  • 1 tablespoon (15ml) maple syrup or honey
  • 1 tablespoon (12g) chia seeds (optional)
  • Pinch of salt
  • For topping (optional): sliced banana, extra peanut butter drizzle, dark chocolate chips, chopped peanuts

Instructions

  1. In a small bowl, mix the protein powder with 2 tablespoons (30ml) of milk until smooth paste forms.
  2. In a mason jar or container, combine remaining milk, peanut butter, and maple syrup/honey. Stir until peanut butter is mostly incorporated.
  3. Add the protein paste to the jar and stir until well combined.
  4. Add rolled oats, chia seeds (if using), and a pinch of salt. Stir until all oats are coated.
  5. Seal the jar and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  6. In the morning, stir the oats. If too thick, add a splash of milk.
  7. Add desired toppings and serve cold or microwave for 30-45 seconds for warm oats.

Notes

For best texture, use rolled oats, not quick or steel-cut. Mixing protein powder with a little milk first prevents clumps. Oats keep in fridge for up to 5 days. Add toppings just before serving.
