  • 1 cup (240ml) milk of choice (whole milk recommended)
  • 1/2 cup (120g) plain Greek yogurt (full-fat recommended)
  • 3 tablespoons (48g) creamy peanut butter (natural, no added sugar)
  • 1 scoop (about 30g) vanilla protein powder (whey or plant-based)
  • 1 tablespoon (12g) chia seeds
  • 12 tablespoons (15-30ml) maple syrup or honey
  • Pinch of sea salt
  • Optional toppings: sliced banana, fresh berries, chopped peanuts or almonds, extra peanut butter drizzle, dark chocolate chips

Instructions

  1. In a small bowl, combine 3 tablespoons of creamy peanut butter with 1 scoop of vanilla protein powder. Mash together with a fork until a uniform, slightly crumbly paste forms.
  2. In a mason jar or container, pour in 1 cup of milk and 1/2 cup of Greek yogurt. Add the peanut butter-protein powder mixture. Whisk or stir until smooth and combined.
  3. Add 1 cup of rolled oats, 1 tablespoon of chia seeds, 1 tablespoon of maple syrup (or more to taste), and a pinch of sea salt. Stir until all oats are coated and submerged.
  4. Seal the jar and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  5. In the morning, stir the oats. If too thick, add a splash of milk; if too thin, let sit for another 30 minutes.
  6. Add desired toppings and serve cold, or let sit at room temperature for 10 minutes if preferred.

Notes

Mix protein powder with peanut butter first to prevent clumps. Use room temperature ingredients for easier mixing. For best texture, use rolled oats, not quick oats.
