A quick and easy one-pot ramen carbonara that uses 5 simple ingredients and is ready in under 15 minutes. Perfect for dorm rooms or late-night cravings, this recipe creates a silky, creamy sauce without heavy cream or bacon.

  • 2 packages instant ramen noodles (discard seasoning packets)
  • 2 large eggs (room temperature preferred)
  • 1/2 cup grated parmesan cheese (freshly grated recommended)
  • 1 tablespoon butter (salted or unsalted)
  • 1/2 teaspoon black pepper (freshly cracked preferred)
  • 1/4 cup reserved pasta water (optional but recommended)

Instructions

  1. Bring 4 cups of water to a boil in a medium pot. While waiting, crack both eggs into a bowl and whisk with a fork until uniform in color.
  2. Add the ramen noodles to the boiling water. Break blocks in half if needed. Cook for exactly 2 minutes until just shy of al dente.
  3. Reserve 1/4 cup of the cooking water before draining. Use a measuring cup or mug to scoop it out.
  4. Drain the noodles in a colander but do not rinse. Shake off excess water but leave slightly wet.
  5. Return the pot to the stove (turn heat off) and add the butter. Let it melt from residual heat, about 30 seconds. Add drained noodles and toss with butter until coated.
  6. In a bowl, whisk together eggs, parmesan, and black pepper until smooth. If too thick, add a teaspoon of reserved pasta water.
  7. Remove the pot from heat completely. Pour egg mixture over noodles and toss vigorously with a fork or tongs for 30-45 seconds until sauce thickens and coats noodles.
  8. Add reserved pasta water a tablespoon at a time, tossing after each addition, until desired consistency is reached (about 3 tablespoons total).
  9. Taste and adjust seasoning with more pepper, salt, or extra cheese as desired.
  10. Serve immediately while warm and luscious.

Notes

Work completely off the heat to avoid scrambled eggs. Add pasta water gradually. Cook noodles in batches for multiple servings. For best results, have all ingredients ready before starting. If sauce looks scrambled, it still tastes good—just chunkier.
