Creamy One-Pot Delicata Squash Risotto

A foolproof, one-pot risotto that combines roasted delicata squash with creamy Arborio rice, sage, and Parmesan. This simplified method reduces active cooking time while delivering rich, autumnal comfort food flavors.

  • 1 ½ cups Arborio rice
  • 4 cups Chicken or Vegetable Broth (low-sodium)
  • 3 tablespoons Unsalted Butter
  • 1 medium Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1012 fresh Sage Leaves
  • 1 large or 2 medium Delicata Squash
  • ½ cup Dry White Wine (e.g., Sauvignon Blanc)
  • ½ cup Parmesan Cheese, freshly grated
  • 1 tablespoon Extra Virgin Olive Oil
  • Salt and Black Pepper to taste
  • A pinch of Nutmeg

Instructions

  1. Preheat oven to 400°F (200°C). Wash, halve, and seed the delicata squash. Slice into ½-inch half-moons.
  2. Toss squash slices with 1 tablespoon olive oil, salt, and pepper. Roast on a baking sheet for 20-25 minutes until tender and caramelized. Set aside.
  3. In a separate saucepan, heat the broth over medium heat and keep it warm throughout cooking.
  4. In a heavy-bottomed pot or Dutch oven, melt 2 tablespoons butter over medium heat. Add onion and a pinch of salt; cook for 5 minutes until soft.
  5. Add garlic and sage leaves; cook for 1 minute until fragrant.
  6. Add Arborio rice and stir constantly for 2-3 minutes to toast the grains until slightly translucent.
  7. Pour in white wine and stir until mostly evaporated.
  8. Add the roasted squash and most of the warm broth to the pot. Stir to combine.
  9. Cover the pot with a lid, reduce heat to low, and simmer for 15 minutes without stirring.
  10. Remove lid and check rice. If needed, add remaining broth and cook for another 5-10 minutes until rice is creamy and al dente.
  11. Remove from heat. Stir in remaining 1 tablespoon butter and grated Parmesan cheese.
  12. Season with salt, pepper, and a pinch of nutmeg. Let rest for 2 minutes before serving.

Notes

Keep the broth warm while cooking to ensure even rice absorption. Do not stir during the covered simmering phase. If the risotto is too thick, add a splash of hot broth. If too thin, let it sit to thicken. Do not freeze, as the rice texture will become grainy upon thawing.
