  • 1/4 cup heavy cream
  • 2 tablespoons unsalted butter, room temperature
  • 1 teaspoon fleur de sel or kosher salt
  • 1 teaspoon vanilla extract
  • 2 cups heavy whipping cream, cold
  • 1 can (14 oz) sweetened condensed milk, full-fat
  • 1 tablespoon vanilla bean paste or extract
  • 1/2 cup toffee bits (optional)
  • 1/4 cup pretzel pieces (optional)

Instructions

  1. In a medium saucepan, heat granulated sugar over medium heat without stirring until it melts and turns amber-colored (5-7 minutes).
  2. Carefully add butter and heavy cream to the hot sugar; it will bubble up. Whisk constantly until smooth and glossy (1-2 minutes).
  3. Stir in salt and vanilla extract. Pour into a heatproof bowl and let cool completely to room temperature (or chill for 10 minutes).
  4. In a large bowl, whip the cold heavy cream until stiff peaks form.
  5. Gently fold the sweetened condensed milk into the whipped cream until just combined.
  6. Pour the cooled caramel into the ice cream base and swirl with a spatula to create ribbons. Fold in toffee bits or pretzels if using.
  7. Pour mixture into a parchment-lined 9×5 loaf pan, smooth the top, cover tightly, and freeze for at least 6 hours or overnight.

Notes

Ensure the caramel is completely cool before folding it into the whipped cream to prevent melting. Keep all equipment cold for best whipping results. If the ice cream is too hard to scoop, let it sit at room temperature for 5-10 minutes before serving.
