  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped (packed in oil)
  • 1 cup heavy cream (240 ml)
  • 1/2 cup chicken broth (120 ml)
  • 1/3 cup grated Parmesan cheese (about 30g)
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh basil or thyme, chopped

Instructions

  1. Pat the chicken breasts dry with paper towels and season both sides generously with salt and pepper. (Prep time: 5 minutes)
  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once shimmering, add the chicken breasts and cook for 5-6 minutes on each side until golden brown and cooked through (internal temperature 165°F / 74°C). Remove chicken and set aside. (Cook time: 12 minutes)
  3. Reduce heat to medium. In the same skillet, add minced garlic and chopped sun-dried tomatoes. Stir for 1-2 minutes until fragrant, being careful not to burn the garlic. (Cook time: 2 minutes)
  4. Pour in 1/2 cup chicken broth to deglaze the pan, scraping browned bits from the bottom. Add 1 cup heavy cream and stir to combine. Bring to a gentle simmer. (Cook time: 3 minutes)
  5. Stir in 1/3 cup grated Parmesan cheese and 1/4 teaspoon red pepper flakes if using. Let the sauce simmer for 3-4 minutes until slightly thickened and smooth. (Cook time: 4 minutes)
  6. Return the cooked chicken breasts to the pan, nestling them into the sauce. Spoon sauce over the chicken and cook together for 2-3 minutes to meld flavors and warm through. (Cook time: 3 minutes)
  7. Remove from heat and sprinkle 2 tablespoons chopped fresh basil or thyme over the dish. (Cook time: 1 minute)

Notes

If the sauce becomes too thick, add a splash more broth or cream to loosen it. If too thin, simmer a bit longer but watch carefully to avoid scorching. Use room temperature chicken for even cooking. Deglaze the pan after searing to capture flavor. For dairy-free, substitute coconut cream and nutritional yeast for heavy cream and Parmesan. Use gluten-free broth to keep the dish gluten-free.
