Creamy Marry Me Chicken

A rich and velvety chicken dish with a creamy sun-dried tomato sauce that is quick, easy, and perfect for weeknight dinners or special occasions.

  • 4 boneless, skinless chicken breasts (about 1.5 pounds / 680 g), pounded to even thickness
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped (preferably packed in oil)
  • 1 cup chicken broth (240 ml), low-sodium preferred
  • 1 cup heavy cream (240 ml)
  • 1/2 cup grated Parmesan cheese (about 50 g)
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • A handful fresh basil, chopped

Instructions

  1. Pat the chicken breasts dry with paper towels and season both sides generously with salt and pepper. Let sit at room temperature for 10 minutes.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering. Add chicken breasts and cook 5-6 minutes on the first side without moving to form a golden crust. Flip and cook another 5 minutes until internal temperature reaches 165°F (74°C). Remove chicken and tent with foil.
  3. Reduce heat to medium and add butter to the pan. Once melted, add minced garlic and sauté for about 30 seconds until fragrant, avoiding browning.
  4. Stir in chopped sun-dried tomatoes and pour in chicken broth. Scrape up browned bits from the pan and let simmer for 3-4 minutes to reduce slightly.
  5. Lower heat to medium-low and slowly whisk in heavy cream and grated Parmesan. Stir continuously until sauce thickens, about 4-5 minutes. Add more broth or cream if sauce is too thick.
  6. Add crushed red pepper flakes if using, and season sauce with salt and pepper to taste.
  7. Return chicken breasts to the pan, nestle into the sauce, and spoon sauce over the top. Warm together for 2-3 minutes to let flavors meld.
  8. Sprinkle chopped fresh basil over the dish just before serving.

Notes

If sauce separates or looks curdled, whisk in a teaspoon of cornstarch dissolved in cold water and simmer gently. Use room temperature chicken for even cooking. Avoid overcrowding the pan to ensure proper searing. Rest chicken after cooking to lock in juices. For dairy-free, substitute coconut or cashew cream and nutritional yeast for parmesan. Reheat leftovers gently with a splash of broth or cream to loosen sauce.
